Livestock Evaluation

The Calgary Stampede Livestock Evaluation course is a three-day intensive hands-on program designed for industry leaders who have an interest in expanding their knowledge of the beef industry. The program has practical applications for cow-calf and seed stock producers, feedlot operators, custom processing and meat marketing industry personnel, agricultural educators, representatives of related industries and anyone who is interested in learning about beef cattle and beef carcass characteristics. A maximum of 30 participants are accepted for the three (3) day program in order for maximum hands-on participation and interaction with the presenters.
Day one begins with the evaluation of live steers to learn how to judge live cattle for their use in the food industry. Participants will estimate cattle parameters that will later be measured on beef carcasses. Participants will learn about the procedures for beef carcass grading and how they are applied to a variety of carcasses.
The second day will continue with live assessments of breeding cattle with discussion on industry trends and how the consumer can make the difference in whether or not you make a profit in the beef industry.
On the final day participants will be given a unique opportunity to work with the presenter to cut a side of beef into component parts. Beef anatomy, beef cut identification and component part yields and values will be discussed.
